Soup

CHBM is looking for soup recipes, so here's one that I love to make on busy evenings (of which there are PLENTY this week!!).

Black Bean Soup, shortcut style

2 cans black beans, drained
2 cans vegetable broth
1 jar salsa (mild) OR 1 can Mexican-style/chili-ready diced tomatoes

Dump all of it into a pot and cook 20 minutes.

Serve with tortillas and sour cream.

Watch your kids consume vast amounts of fiber and vitamin C without complaining.

Holy cow! That's like only three ingredients and I bet it's filling! Serve with some tortilla chips and wah-la!! A five minute meal! Thanks for participating!!

we made this for dinner last night, it was yummy.

I added fresh cilantro, and some diced onion and shredded cheese to make it black bean burrito soup :D

next time I think I'll add some rice, and mash some of the beans, so it's a thicker texture.
